Valued customers, friends and family,

We pray that your summer has treated you well.

After careful consideration, we have decided to temporarily close The Gin and Granary and pause to decide how to proceed forward. The increased time demand for us at the restaurant during this time of decreased workforce, has begun to more greatly interfere with our family life as well as our other business obligations with Pecan Creek Farm and Ranch. Our family and our businesses deserve more attention than we are currently able to split. Rest assured that this is only a pause and we hope to return to continue serving Wall and the surrounding areas. In the meantime, we are still available for catering and as a meeting and party venue.

This decision is not one that has been made lightly nor in haste. If you have any questions at all, we are happy to answer your call.

There are lots of things that affect the color of ground beef. This post shows some of the big ones. Muscle is dynamic and the color can be affected by so many factors from the age and feeding of the animal, to the packaging, storage conditions such as temperature, the amount of lean in the grind, whether or not its beef frozen, and many more. And this is just fresh beef. Color in processed meat and cooked foods can be even more complicated. I find it very interesting and we've conducted several studies on ground beef color in our lab.

Just remember that beef color is not simple and can be affected by many factors. Certain posts that are making the rounds on social media are trying to claim that one package of beef is superior to another because of its origin and its color. They make claims about preservatives and safety that are not true.
