Apple bananas are a staple in many Maui kitchens, and Chef Taylor Ponte turns them into a light, comforting cake at Aurum Maui.

Ingredients:
2 cups cake flour, sifted
¾ tsp baking soda
1 tsp baking powder
1¼ tsp fine salt
12 Tbsp butter, softened
1 packed cup brown sugar
2 medium eggs
2 tsp vanilla extract
2 Tbsp sour cream

Charred in a hot wok and paired with a creamy tofu-doenjang Caesar, it’s finished with crisp garbanzos for texture.

Ingredients:
- 9 oz broccolini
- 2 Tbsp olive oil
- ½ cup cooked garbanzo beans

- Salt - ½ cup grated Parmesan Reggiano, plus more for finishing
