Hi, I am Nita Jain and welcome to Taaza (Fresh) Table! I am a huge foodie and passionate about creating vegetarian recipes that are healthy, dairy-free, gluten-free, organic, and tasty. Food has changed my life and has dramatically improved my health – the goal of Taaza table is to share the transformative power of plant-based, dairy-free, gluten-free food with you. While I have always loved delicious food, my culinary passion grew dramatically after moving to the United States in 2003. Having an Asian-Indian background, I started with a foundation in vegetarian cooking utilizing lentils, aromatic spices, and a variety of vegetables. Once I moved to this country and found myself exposed to new and exciting cuisines, restaurants, and chefs, I started developing my palate and experimenting with new recipes in my own kitchen. However, after giving birth to my boys, I started experiencing debilitating pain and stiffness in my joints. Facing the prospect of regular medication and a lower quality of life, my passion for food waned and despair started to set in. Fortunately, after countless hours of research as well as trial and error, I discovered that food held the key to my healing. Armed with a newfound mission, I dove back into cooking and eliminated dairy and wheat from my diet while finding new and healthy ingredients to include in my food. As a result, my life has been transformed – my health has returned and I am feeling better than ever. The power of food! While the majority of the recipes you will find on Taaza Table reflect my personal diet of vegan and gluten-free cooking, you will also find some recipes that are only vegan and not gluten-free. I have included these options since some of my family members are not gluten-free. Finding both vegan and gluten-free recipes that taste good is a tall order. My goal is to share the recipes and experiences I have learned on my journey, so others do not have to search as I did. I truly hope you enjoy your visit to Taaza Table and find knowledge, inspiration, and joy while you are here! Freshly Yours,
Nita

Taste the sweetness of the Journey ✨

So often, we get completely fixated on the destination, the outcome, the goal, the final result. But the magic of life lives entirely in the middle.
Whatever you are building or calling into your life right now: enjoy the process. Show up, work hard, pour your heart into every single step, and then let go.
We spend so much energy worrying about where we’re going to land that we forget to taste the sweetness of where we are right now. When you release the need to control the outcome, peace takes its place.
Do your best, trust the timing, and know that the Universe has your back orchestrating every detail in perfect alignment.
Enjoy the ride. It’s all part of the blueprint. 🌿✨

🌿 Shake off the negative energy and come back to your roots. ❤️

The gentle rhythm of seed beads is a beautiful addition to sound healing, helping create space for grounding, balance, and reconnection with the Root Chakra. 🌎❤️

I use this sacred sound to help release stagnant energy, break up energetic blockages, and invite a deeper sense of grounding, stability, and inner peace.

Why cut dairy, gluten, eggs, and processed oils? According to Medical Medium, these foods act as primary fuel for viruses and bacteria, overburden the liver, and create systemic inflammation. Drop the troublemakers, nourish with whole plant foods, and let your body heal. 🌿

Sitting on the sacred river banks of the Ganga in Rishikesh, reflecting on everything I have walked through. Every high, every low, every lesson hidden in the positive and negative experiences alike.
This inner path is about dismantling old limiting beliefs and conditions, bringing radical awareness to my shortcomings, and consciously choosing what I want to change. It is an ongoing commitment to unlearn, learn, and continuously evolve into the truest version of who I am meant to be.

Awareness is the quiet art of tuning in to your physical self—learning to listen to the subtle signals your body sends long before they turn into discomfort. It is the bridge between mind and motion, where tuning into your breath, noticing where tension lingers, and honoring your natural rhythm transforms everyday movement into a grounding, intentional practice. By developing this felt connection, you cultivate a deeper sense of presence, ease, and harmony within your own skin.

Millet Tortillas 🫓

Ingredients:
2 cups water
2 cups millet flour
1 tsp garlic powder
¼ tsp sea salt

Directions:
Bring 2 cups of water to a boil and the the millet flour. Do not stir. Allow the water to continue at a low boil for 2 minutes. Then add the garlic and the sea salt (if using). Remove from the heat and mix until combined.

Form the dough into small balls Place a ball between two pieces of plastic wrap and pressed in tortilla maker.

Heat a cast iron pan on medium, add the tortilla and let it cook 2 minute on each side and flip and cook until little brown and char on other side.

Enjoy with Indian and Mexican recipes. My favorite way of eating them is as tacos- charring them on stove, adding black beans, fajitas, lettuce, salsa verde, and little guacamole. ✨
