Pablo’s Tropical Blend is officially in motion. I’ve been working on this one for a while, wanting something bright, fruity, and uplifting that works on more than just one thing. The first batch has been made and I’m testing and tweaking it now, and so far it’s hitting exactly how I hoped. It’s the kind of blend that wakes food up, and I’ve been trying it on fruit, sweet potatoes, carrots, mixed drinks, smoothies, Greek yogurt, ice cream, cottage-cheese, pancakes, and it keeps surprising me every time. I’m also rolling out the new sundial for this blend, and I chose the bright orange-sun color because it matches the personality of the blend warm, sunny, and full of lift, like morning light on the water. The blend has that same brightness, so I wanted the sundial to carry that energy. This one is meant to feel joyful, refreshing, and a little tropical every time you pick up the jar, and more updates are coming as I dial it in.

There’s a different kind of stillness that shows up on a rainy Saturday.The sky is overcast, the air carries that soft spring chill, and the whole world feels like it’s moving just a little slower almost like it’s giving you permission to breathe.

I stepped into the kitchen this morning not just to make coffee, but to make space.Space to reset.Space to listen.Space to remember why I’m building Pablo’s in the first place.

A strong moka espresso.A touch of brown sugar to warm the edges.A cloud of shaken foam.And that final dusting of Morning Mercy the reminder that grace doesn’t wait for perfect days. It meets you right where you are.

Tonight’s plate was simple chicken breast, green beans, and potatoes, but it reminded me why I started creating my own blends in the first place. Backbone was the first one I ever built. I came up with it during a season when I needed something steady, something with grit, something that matched the way I was pushing through life.

I haven’t brought Backbone to the market yet. I’m still in the tasting and testing phase, but every time I cook with it, it reminds me why it exists. It’s about strength, consistency, and showing up even when things feel heavy.

And while I was cooking tonight, I kept thinking about the new blend I’m creating just in time for the summer grilling season. I’ve been writing it out, developing it, dialing it in and it’s coming together in a way that feels right for where I’m headed. Summer’s the perfect moment to introduce something new.

This morning, with a cup of Morning Mercy in hand and the cool air drifting through the window, I took a moment to reflect on how far Pablo’s has come.

Pablo’s began in 2009 with a simple sketch on a napkin — a man resting against a cactus in the desert, the buzzard above, the sun behind him. A vision that carried meaning long before it became a brand.

Today, seventeen years later, Pablo’s is on the cuff of receiving its official trademark.

This milestone represents more than paperwork — it marks the evolution of a long‑held vision into a protected, established brand. The same logo. The same story. The same spirit.

Pablo’s isn’t just a spice company.It’s a journey that started at a kitchen table and continues to unfold with purpose.
