What a couple of days…
A message from the Pit Master (Juan Taco Sr. Esq.)
We’ve never seen these kinds of numbers. The people, the food, the beverages….we had a feeling people would pull up to Hogan and support what’s been 3.5yrs in the making…we were right.
The outpouring from the community has been huge. Bigger than we could have ever imagined. It’s hard to think, going from cooking 8 briskets a day to 40, nothing can prepare you for an increase like that. I thought burgers would be an afterthought, sold 400 in two days. The sheer volume of food is testing the team. If I’m being completely honest, we’re kinda slow, but for good reason. We don’t want to slop something on a plate. The people in this kitchen have pride, they have a passion, and they want that to come out. Currently, it takes time. Show me a 6 person kitchen, our size, to pump out 100 tickets in 45min, there aren’t any, trust me, I’ve asked local restaurant owners. What we’re seeing is uncommon, but very exciting.
I’d like to address the patience people are having. Thank you for understanding as we navigate through this. It’s been a heck of a past few days and we’re doing the absolute best we can. We’ll make it click sooner than later. Thank you for being apart of the ride.
I’d like to address the patience people are losing. I understand it’s frustrating. I get it. Nobody is more upset with us than us. That being said, we will not tolerate yelling at or talking crazy to our people. Our people have put in hours nobody sees. We all have families. We rarely see our children. If you’re talking crazy, it will not be tolerated and you will be escorted off of property, without question and any further communication will be done through email.
(That’s addressed to the gentleman who decided it was ok to verbally abuse and cuss at our cashier. The person at the cashier at the time, my wife.) Unfortunately, I was not at HY when this occurred.
This is an exciting time. Everyone here has poured everything into this place. Give us some time to tame the volume. It’ll be worth it, I promise.
Memorial Day is a special day to remember loved ones who’ve served in the military and have passed away. Not a day of celebration, but a day of remembrance. Remember them for who they were, laying their life on the line, and moving forward into battle. Thank you to them, to our veterans, and everyone who’s supported them.
Today, we’re running a $5 pulled pork sandwich and donating 100% to a local Veterans group who focuses on fighting PTSD.
