Fun fact: FDA guidelines and food codes require that almost all fish intended for raw consumption (sushi/sashimi) be frozen first to kill parasites, often using flash-freezing for efficiency. "Sushi-grade" is a marketing term, not a legal definition, though it usually indicates the fish was frozen to destroy parasites. Thawed sushi-grade fish should generally be consumed within 1–2 days. If it was forgotten in the fridge for more than 2-3 days, it is risky to eat raw.
