There are moments that remind you why you dedicate your life to a craft.
Today is one of those moments.
After years of passion, sacrifice, study, and countless hours in front of a wood-fired oven, Daisuke has officially been recognized by the Associazione Pizzaiuoli Napoletani (A.P.N.) as an Official Neapolitan Pizzaiolo. Even more, Pizzeria La Sorrentina has been certified by the A.P.N. as an establishment that faithfully represents the traditions, techniques, and values of authentic Neapolitan pizza.
What does that mean?
It means that every pizza we serve isn’t simply “Neapolitan-style.” It is made according to a culinary tradition that has been passed down for generations in Naples using simple, extraordinary ingredients—00 flour, sea salt, yeast, San Marzano tomatoes, and fresh mozzarella—along with techniques refined over centuries. This isn’t just food; it’s living history. A tradition so culturally significant that the Art of the Neapolitan Pizzaiuolo is recognized and protected by UNESCO as an Intangible Cultural Heritage of Humanity.
The pizza on your plate tomorrow will taste just as delicious as it did yesterday. 😊
But today, we have something incredibly meaningful: official recognition that what we’ve been pouring our hearts into truly honors the traditions of Naples.

We are also incredibly proud to be the first pizzeria in our area to receive this recognition from the A.P.N. It is an honor we don’t take lightly, and one we promise to uphold every single day.
