This is by far one of the quickest, most simple and inexpensive dinners I make and my family LOVES IT!
Stuffed shell casserole
(Let's face it, I don't have time to be stuffing shells)
*1 lb Ground Beef
*1 package taco seasoning
*1 pound pasta (rotini or mini shells hold up well)
*1 bag Taco blend cheese
*1 jar salsa (I use Pace mild)
Brown ground beef, drain excess grease and add taco seasoning, add cooked pasta, salsa and cheese. Mix and heat on low until cheese is gooey..
Pour into casserole dish(Optional...Broil on low until cheese slightly browns or serve straight off the stove)

Beef stroganoff with a side of peas and turkey gumbo.

Hi everyone! Long time, no see! Hope everyone is well. Sending my heartfelt prayers to all of you experiencing pain, trauma, loss and illness. Hoping for nothing but the best for everyone ...even if you are well and just doing life. In the spirit of "everyone is sick" or "it's yucky weather season", I got busy with the soup while trying to catch up on work stuff (we spent a huge part of the day at Urgent care) Tomato Basil, vegetable beef, chili and chicken soup (will just have to add noodles later...YA DON'T FREEZE GF NOODLES!🤢). Anyways, stay cozy, stay warm and stay well.
