Soup, chashu, tare. I love the simplicity of the next two weeks of ramen I got going on. I’ve never seen chashu made the way I’ve been doing it for the past years. Chicken chashu is traditionally chicken breast. But I really wanted to mimic pork belly chashu with the looks and the fat and flavor. I think this version of chashu should take the ramen world by storm.

We will be opening up for lunch hours soon. Very soon. Ok so I have some dates for you guys coming up this month Thursday September 3rd I’m doing a cooking demo and class with Paul Young we will be closed Friday evening as well as Saturday the 4th and 5th of September in preparation for Aloha Market. The event is a MASSIVE Hawaiian and Polynesian festival happening on the 5th from 2-9pm at the CEDAR LAKE FARMERS MARKET grounds in cedar lake Indiana. It’s a 2 hour drive so if any of my customers want to come check it out it’s a crazy fun time. Then we will be linking up the homies at Baldarotta's Porketta & Sicilian Sausage Cloud Mountain Kombucha 25 O'Clock Brewing Company for the Bazaar Urbana event on the 12th. We will also be closed the Saturday the 26th for a VFW POST picnic and is NOT open to the public.

The Oni-Level Tonkotsu has gotten a couple people. I’m sorry to the customer who came in for their first time and went straight to this. I love the fu**in confidence. I love abusing customers and I love the customers that just keep coming back for it, you guys are the real ones 😘😮‍💨 Thanks everyone for coming in this week.
