Back in March, I was fortunate enough to have the pleasure of attending Taste of Tyler. The vast array of dishes I sampled was simply a dream come true. Enough to send any foodie into a food coma.
One dish in particular stood out, though. So much, in fact, that it actually made me lose sleep trying to recall who had served it to me.
You have to understand, I had tried my best to keep up with what booth served what. However, I had spiraled after the first dozen or so samplings. Think Templeton from Charlotte's Web when they went to the fair.
The dish that haunted my palate? Biscuits and Roasted Poblano Chicken Gravy.
The two-month mark hit, and I simply could not stand it any longer. I HAD to have it again. I began a deep dive into Tyler's culinary scene. I sent emails to the organizers that remain unanswered. I scoured the internet. I begged ChatGPT and Gemini to help. I messaged local restaurateurs one after another. Nobody knew. Alas.
Finally, I turned to TikTok and searched "Taste of Tyler 2026". The results were bleak, but there was one creator by the handle "TRUUUDAMACKTV" who had reviewed several of the booths. I began scrolling through his videos. I had hoped to at least catch a glimpse of the booth, as I knew its location, just not the name. What I found was even better... He had actually sampled the same dish!
I could finally make brunch plans and satisfy my insatiable craving... or so I thought. Think again, Mikey. The booth that had served this dish was actually a catering company by the name of Azalea Catering Company.
I immediately sent them a message, and they quickly responded. Forty-eight hours notice would be required in order for me to place an order for the dish. Despite my flattery.
By this time, I had already prepared myself for the inevitable. I placed my order with the grocery store and prepped my kitchen. I would take on the culinary endeavor myself, albeit with one substitution. Unfortunately, poblanos were unavailable, but I figured Anaheim peppers would sub nicely.
I woke up this morning and dove right in. I used only the finest ingredients, and I nurtured the pot as if I would be serving the dish in a Michelin-star establishment. I knew I couldn't match what I'd experienced, but I was determined to satisfy.
The results were astounding, thank the foodie higher powers! A touch more slurry for thickening wouldn't have hurt, but the whole fam thoroughly enjoyed it. I also made sure to make plenty of the gravy, so you can bet this will be making an appearance at dinner as well.
