The smoke is thick out there right now, and air quality across North Central Washington has been sitting in the unhealthy range.

If you need to get out of it for a while, come to us. Blue Star is air conditioned with clean, filtered air, so it’s a good spot to breathe easy, cool off, and take a break from the haze. Grab an iced coffee, a cold drink, or a hot one if that’s more your speed, and stay as long as you need.

Take care of yourselves out there. Check on your neighbors, keep an eye on the AQI, and know our doors are open if you need somewhere to escape the smoke ☕

What's a coffee bean called before it's roasted?
A green bean!

It's true. Before coffee gets that deep, rich brown color you know, it starts out pale and green like the ones in this bucket. And here's the part that surprises most people: a coffee "bean" isn't really a bean at all. It's the seed of a cherry-like fruit that grows on coffee trees. Farmers pick the ripe red cherries, remove the fruit, and what's left inside is this green seed.

Think of it like an avocado. You eat the soft green flesh and toss the big pit in the middle, right? With coffee, it's flipped. The fruit gets removed and it's the seed at the center that we're after. That seed is the green bean, and it stays green and grassy until heat transforms it in the roaster.

So every incredible cup you've ever had started as a little green seed inside a piece of fruit.
