This is Michael.

He makes all the dough at Tuccillo’s. He makes all the sauce from scratch. And if you’ve had one of our tomato pies, you’ve had a little bit of what he’s been working on his whole life.

Michael grew up in his dad’s restaurant, back when he was just a kid standing on milk crates because he could barely reach the oven. That’s where he learned the old way. Work hard. Taste everything. Don’t rush the dough. Don’t take shortcuts.

In the 90s, he opened his own tomato pie restaurant. Now he’s back at it in Little Egg Harbor, making Trenton-style tomato pies the way he believes they should be made.

Cheese first. Crushed tomatoes on top. Olive oil. Into the oven.

Tomato pie is simple. But it takes someone who knows what they’re doing. Michael is an old-school Jersey Italian food guy through and through. He cares about the sauce, the dough, the bake, and whether the pie leaves the kitchen the right way.

We’re proud of what we do at Tuccillo's and love what we do.

The sauce is never just sauce.

This is the recipe that’s been passed down through our family, pot by pot, Sunday by Sunday, generation after generation. The kind of sauce you learn by standing next to someone in the kitchen, watching, tasting, stirring, and getting told, “not yet.”

It’s in our tomato pies, our pasta, our parmigiana, our meatballs, and half the things we end up dipping bread into before it ever makes it to the table.

Along with our delicious Tomato Pies, Chef Michael is making some great Italian dishes this week. Vodka ravioli. Roast pork au jus. Chicken parmigiana. Lasagna al forno. Scallops, shrimp, and mussels in marinara over pasta. Catch of the day, done lemon butter garlic or Giovanni style.

And because Bon Bon doesn’t know how to take it easy, there’s homemade cheesecake, carrot cake, cannoli, and hot brownie with gelato too.

Meet Ben, the original Spicy Baby Ben.

He’s the youngest member of our family, and around here we call him spicy because he keeps us on our toes and always finds a way to make things interesting. So naturally, we had to name a pie after him.

The Spicy Baby Ben is made with mozzarella, hot cherry peppers, prosciutto, crushed tomatoes, and basil. The perfect balance of sweet and spicy -- just like Ben!

And yes, Ben likes to eat his pie upside down. We’re not saying it’s the right way, but it is the Ben way.
