According to us, our dinner at was the official kickoff to SUMMER! We enjoyed a beautiful evening under blue skies, watching a perfect sunset, making friends and meaningful conversation. The opportunity to prepare and share delicious food that was raised on the ground we served it on, and special wine with stories from our recent visit to Piemonte, Italy brought us so much joy. We are eternally grateful for the partnership we have with John & Eva; their philosophy on farming, family, and community are exactly what we look forward to bringing to all of our guests at every event and every night of service. Thank you to all who attended, and to our hard working team for helping us make this night happen! More fun to come this summer so keep your eyes peeled!

We feel incredibly fortunate to partner with St. Croix Farm for our live fire dinner on May 22nd. This dinner will feature short ribs from mature cattle, something rare in the United States, where most cattle raised for beef are harvested before the age of 2.

While older cattle are often overlooked in modern beef production, we believe mature beef offer deeper flavor, greater richness, and a complexity that only comes with time. Years of muscle development and a productive life create beef with a character that is hard to compare to.

Using our slow-roast live fire approach, we allow the beef the time it needs to gently break down and become incredibly tender while preserving its richness and depth of flavor.

We hope dinners like this encourage a broader appreciation for mature beef and help create more opportunities for farmers to sustainably market dairy cows and other cattle that have lived long, productive lives.

Spring Fling at Evermore Hall was so incredible, we wish we could relive it over and over again! Watching the sun soak every inch of the table and being witness to the laughter and conversation illuminated by the golden hour glow had our hearts ready to burst. Filling the table with food made with the first shoots of springtime, chickens from St. Croix farm, and incredible wine was a glimpse into what’s to come during every service at First + Adams. Our friends, our loved ones, sitting together beneath the blooming ceiling of color thanks to The Balloonary, it was absolute perfection.
Thank you to Cassidy and Andy and their team for their constant support and excitement that made this night possible! Thank you to our team for once again tuning in to every detail and bringing the best energy for a perfect night! The tight knit network of the upstate restaurant industry is a place we find ourselves so fortunate to be woven into. Getting to spend some time on the ramp up to our opening to jump on opportunities to work with some of our favorite industry friends has been so much fun and such an incredible experience. Huge thanks to and the whole team at for welcoming us in with open arms for this pop up - every piece of the menu from the food to the wine and mocktail pairings was in perfect harmony, and such a treat to put together. Seeing the dining room filled with fellow chefs and industry leaders, former coworkers, so many of our favorite regulars, family, and friends was so special, and gave is a glimpse of what’s to come for First + Adams. This past Saturday was one of the most perfect nights we’ve experienced. Being able to host an event at St Croix Farm feeding people their food, letting everyone take a farm tour with John, watching the sun set together over a full table of food and drinks and friends; it just doesn’t get better than that. We are so happy to have gotten to meet so many new friends, and see so many near and dear loved ones come together for this special night. Thank you for joining us! We can’t wait to see you all again soon!

Hey all! We’re Jake & Paula and we are so excited to be bringing to you SOON! Both of us have been in the hospitality industry for our whole lives, and our dreams of opening a restaurant are finally coming true! Thanks to Russ and Jody Brooks who are working with us and building out the space, we have been given the pleasure of bringing a contemporary new American concept to Troy, NY and we could not be more excited or more thankful. While the buildout continues, we will be hosting pop ups and events as we ramp up to our opening, so stay tuned! We’re happy to be here, and happy to have you here, too!
