PSA of transparency:
Speed, Quality, Affordability.
A good friend of mine always said that in business, you get to pick two.
If you want it fast and affordable, you won't get much quality. If you want quality and you want it fast, it won't be cheap. If you want affordability and quality, it won't be fast.
From all the feedback we have received, be it in-house, via Google reviews or on Facebook, it has been made clear that we are not fast food. We know that. If we were, we would put in a drive-through.
We are a ma and pop small town local diner. Our staff is predominantly family. Mom, dad, gma, papa, aunt Beet, 2 of our 5 children who are of age to work, and a few extra to help carry the load whom we now call family.
While we were under construction, the biggest request was affordability from the community. With increasing wages and food cost, the only way to provide that is to run lean. We are approved for a maximum occupancy of 3 in our kitchen. We typically run with 2. One grill cook and one fry cook, scrambling to maintain dishes between rushes.
We do not own a microwave. Everything is hand pattied, hand cut, hand battered to order. If something needs to be heated quickly, it is fired on the stove. Our volume has far exceeded our expectations. We do prep fresh pattied burgers, tenders, and chicken breast each day. We have tripled the amount required at prep time in one month. Sometimes, we are cutting lettuce and making patties or sauces order for order because the volume has depleted our stockpile. We are adjusting to volume changes and making an effort to be more expedient.
Could we increase staff and be as fast as the big chains you're used to? Perhaps, but that cost for labor would be passed to the consumer. Could we add a microwave? Not if my cook has anything to say about it 😅
