We have a very limited number of The Fermentation Project box sets in-store only. If you haven’t gotten your hands on these coffees yet, this is your last chance before the global live tasting this Saturday, October 3rd with James Hoffmann and Lucia Solis.

You can try any of our slow bar offerings not only on pour-over but also AeroPress Coffee Maker. It’s extra rich and syrupy. We like to say if a pour-over is like apple juice than an Aeropress is like apple c***r 🤤

Say hello to two new coffees arriving this week. We have an old favorite returning, the Colombia Aponte Village, and a natural process lot of the Ethiopia Habtamu Fikadu.

A little about each coffee:

Colombia Aponte Village

[KUH-LUM-BEE-YUH • AH-PON-TEY • VILL-IJ]

Process: Honey
Region: El Tablón de Gómez, Nariño
Elevation: 2,000 - 2,150 MASL
Varietal: Castillo, Caturra, Tabi

Bright and exceedingly sweet, with notes of grape jelly, guava, and pumpernickel.

Aponte is a renowned coffee growing community in Nariño, Colombia, where indigenous Inga producers cultivate coffee on communal lands. Specialty coffee is key to the community’s identity, representing an economic avenue by which the Inga regained control after the armed conflict of the 80s and 90s.

Aponte producers deviate from the standard washed process in favor of honey processing as their preferred method, in part because of the water it saves. Done carelessly, the honey method fails. Done with the patience, the seed dries in contact with its own sugars and the resulting cup is layered and extremely sweet. The region’s volcanic soils, cool mountain climate, and elevations reaching over 2,000 meters means trees grow slowly and cherries stay small and dense, which contributes to the exceptional quality and complexity of Aponte’s coffees.

Ethiopia Habtamu Fikadu Natural

[EETH-EE-OPE-YA • HAB-TOHM-OO • FEE-KUH-DOO]

Process: Natural
Region: Guji, Buku
Elevation: 2,000+ MASL
Varietal: 74110, 74112

Juicy and sweet naturally processed coffee with notes of peach juice, molasses, and gummy bears.

Habtamu Fikadu Aga was founded in 2015 by Aaga Dinsa. He inherited his grandfather’s farm, which remains the export-hub of the operation. Today the organization spans 105 hectares planted in Kuri Kebele, plus 837 hectares of 144 registered outgrowers.

At the company’s washing stations, cherries are pulped and undergo a submerged fermentation. After washing, they rest in water for another 12 hours before being dried on raised beds for 10–12 days. This careful and consistent method underpins the quality across all of Habtamu’s lots.

The Fermentation Project is a collaboration between James Hoffmann, Lucia Solis and roasters around the world.

Mundos is incredibly honored to take part in this global coffee tasting experience, and to share it with you.

4 - 8oz boxes

Grown at Finca San Miguel Urias, owned by Hector and Lilian Leal, operated under Rueda Farms, Antigua Valley (genuine Antigua), between Ciudad Vieja and San Miguel Dueñas, and the variety is ~85% Caturra, ~15% H1 and some Bourbon. All of these lots were processed by Lucia Solis, who worked closely with the farm team to ensure the coffee was pulped, fermented, washed, and dried according to specification.

The goal of the Fermentation Project is to shed light on the less understood world of coffee fermentation. One lot of coffee, processed 4 ways to illustrate the effect different types of fermentation has on a coffee.

LACTOBACILLUS INOCULATED
Fermented for 48 hours, this fermentation enhances the production of organic acids, impacting the brightness and complexity of the coffee.

MECHANICALLY DEMUCILAGED
Processed without fermentation to serve as the control. The profile of this coffee comes from growing practices and genetic varietal characteristics.

WILD FERMENTATION
Fermented for 48 hours with local wild microbes. This is the traditional method most coffees experience, where the mucilage is removed by the local microbe population.

YEAST INOCULATED
Fermented for 48 hours, this fermentation enhances the production of flavor precursors, impacting the body and complexity of the coffee.
