Some dishes are more than a meal—they’re a reflection of place.

Our English Mountain Rainbow Trout brings together the flavors of the Smokies through thoughtfully sourced ingredients and careful craftsmanship. Herb-brushed trout rests alongside Cherokee White Eagle polenta, bi-colored corn, and a lima bean & crawfish succotash, finished with smoky local corn sauce, charred corn, trout roe, rock shrimp and tomato relish, and basil oil.

Each ingredient has a purpose. Each bite tells a story of the season, the land, and the people who cultivate it.
