Gingersnap Pumpkin Cheesecake

CRUST

• Gingersnap cookies — 32, finely crushed
• Butter — ½ cup, melted

PUMPKIN FILLING

• Cream cheese — 24 ounces, softened
• Granulated sugar — 1¾ cups
• Pumpkin puree — 15 ounces
• All-purpose flour — ¼ cup
• Cornstarch — 1 tablespoon
• Pumpkin pie spice — 1 tablespoon
• Large eggs — 4
• Heavy cream — ½ cup
• Vanilla extract — 1 teaspoon

METHOD

1. Preheat the oven to 325°F. Mix the cookie crumbs and butter, then press into a 9-inch springform pan.
2. Bake the crust for 10 minutes and let it cool slightly.
3. Beat the cream cheese and sugar until smooth. Mix in the pumpkin, flour, cornstarch, spice, cream, and vanilla.
4. Add the eggs one at a time on low speed, mixing only until combined.
5. Pour over the crust and bake for 65–75 minutes, until the edges are set and the center still jiggles slightly.
6. Cool completely, then refrigerate for at least 6 hours before serving.

Banana Cookies
Soft, sweet, and naturally moist with plenty of banana flavor...

All you need is:
1 1/2 cups all-purpose flour
2 ripe bananas, mashed
1/2 cup granulated sugar
1/4 cup unsalted butter, melted
1 large egg
1 tsp baking soda
1/4 tsp salt

Lemon Graham Icebox Cake

INGREDIENTS
Lemon Jell-O — 1 box, 3 oz
Boiling water — 1 cup
Cream cheese — 8 oz, softened
Sugar — 1 cup
Lemon juice — 4 tbsp
Evaporated milk — 1 can, 12 oz, well chilled
Crushed graham crackers — 2 cups

PROCEDURE
Dissolve lemon Jell-O in boiling water and let it cool slightly. Beat cream cheese, sugar, and lemon juice until smooth, then fold in whipped chilled evaporated milk. Layer with graham crumbs in a dish and chill for 4 hours or until firm.
