Autumn can be read in ingredients before it ever composes a dish.
Figs offer a deeper sweetness. Walnuts add earthiness, while pomegranate cuts through with brightness. Cardamom perfumes the dish; pumpkin brings body. Saffron gives warmth, jaggery brings a rich, caramel-like sweetness, and turmeric finishes with unmistakable depth.
In Indian cuisine, autumn isn’t defined by one flavor. It’s built through contrast, where each ingredient changes the character of the dish. Those contrasts become part of how we interpret the season at Amrina. 🍁
