Chef Tony is making improvements to Boyd's Cajun Grill's already delicious seafood items in Texas City.
He's recently made the switch to beef tallow over conventional fryer oil in all of the cookers. Beef tallow has some favorable qualities such as higher heat stability (which prevents oxidation), a longer usable "fry life", richer savory flavor, and natural fat-soluble vitamins. The bottom line is that it should benefit our customers and taste better at the same time.

Tony knocked out a sample of fried wild caught Gulf shrimp and fries for me to try. It's no secret that my favorite seafood is wild caught Gulf shrimp. These did not disappoint. Crisp but juicy with a little Cajun seasoning and lemon powder in the corn flour. Delicious!
Chef Tony has other good ideas for the Grill. More on them later. Come try some of his fried entrees. Let us know what you think. Take a picture of what you get through the window.
