They’re here!
Green coffee from James Hoffmann and Lucia Solis’s Fermentation Project: same lot from Finca San Miguel Urias in Antigua, Guatemala. 3 different processes and a control.
Everyone at the table uses the same sheet.
Opening order: Yeast, 48-hour Saccharomyces inoculum Lactic; 48-hour Lactobacillus inoculum Wild; 48-hour native microbes, no culture added Mechanically washed-the control, no tank fermentation
Roasting next. Cupping with a small team of the best roasters in South and Central Florida, some high-profile coffee insiders, and a Q grader.
Same coffee, four decisions. Let’s see where it goes!

He grew up in Queensland. Wet season. Dry season. Crocs in the creek and coffee on the tablelands.
Everyone said there was something off about him. Too still in the heat. Too at home in the water. Too stubborn about the land. Man or monster…or both. He never answered. He just kept the fields plowed and the creeks clean.
That country is Mareeba. Jack Murat Farms. Hymet “Jack” Murat came here in 1929. Same volcanic soil. Same family. Now Australia’s largest specialty estate: Catuai in the rows, winter harvest, clean cane-sugar sweetness, stone fruit, macadamia, caramel.
Aussie Jack is that story in a cup. Conservation and Queensland on the finish.
Is he man or monster?
He’s the farm. Enjoy the legacy.

Strawberry Shortcake Co-Ferment
El Vergel Estate · Forest Coffee
Last bits of summer in a cup.
Castillo, Caturra, and Colombia cherries from Huila, Tolima, and Caldas, processed at El Vergel. Hand-sorted, 24-hour pre-ferment in bag, 24 hours in cherry, then five days anaerobic with mucilage, yeast, and strawberry-honey process, mechanical dry.
In the cup: shortcake, cream, Crunchberries on the finish.
Filter or milk. Both work.
