Nothing complicated about this one — spare ribs, post oak, clean smoke, and patience. 🔥 First cook on the 250-gallon offset and I couldn’t ask for a much better start. Now it’s time to keep learning the pit and see what we can really do with it. 💨

Time to make it official. 🔥 First cook on the 250g starts around 5am. Prairie Fresh Pork Spare ribs are ready… pit still needs a name. 👀 Drop some ideas. Seasoned with Gulf Coast Smoke Donnie Howard and 16 mesh black pepper. Used Sowers’s Hot Sauces as a binder and some kick.
