Prosciutto wrapped scallops, pan-seared and served over roasted sweet-potato. Finished with basil vinaigrette, creme fraiche, and golden gooseberries. The sweetness of the berry and potatoes are such a surprise contrast to the savory, salty prosciutto. Perfectly balanced and wildly playful. Limited supply. When they're gone, they're gone!
