We're opening up one of our favorite summer white wines this weekend: Txakoli (chock-oh-lee)!

Similar to Vinho Verde, this effervescent and crisp white wine comes from the Basque region of Spain and it's begging to be shared amongst oysters this Memorial Day weekend. Enjoy a carafe of Txakoli and half dozen oysters for $40.

Tasting notes for txakoli: bright, crisp, lemon, salty, sun on your face type of wine ☀️✨!

Walk-ins welcome! See you on the outdoor deck 👋

May is an interesting time for local produce in Vermont. If you were to look into our walk-in fridge, you’d see a combination of mixed spring greens in addition to root storage crops.

Thus, our blackened celery root salad was born ✨ - the perfect representation of what’s available to us at this time of the year.

This dish takes the best of what we are growing right now (field fresh head lettuce) and combines it with one of our favorite root storage crops harvested in the colder months (celery root). Don’t miss out on this dish!

This Wednesday we’ll be teaming up with to bring you La Colmena - an event inspired by community gatherings and Mexican flavors.

In the spirit of localized collaboration - we’ll be sourcing our corn tortillas and chips from our Vermont friends at ! Their team makes some of the best stone-ground nixtamal tortillas with organic and heirloom corn right in the Old North End of Burlington VT.

Their organic and heirloom corn (Wapsie Valley) comes from Lakeview Organic Grains - a leader in certified organic practices, and a champion of cover crop seed practices and organic animal feed.

Wapsie Valley corn is an older heirloom that yields two types of ears, some with goldenrod yellows, and others with rusty reds. They're beautiful, and have a good ratio of hard to soft starch in their endosperm, making them a 'lighter' corn to work with for more supple tortillas than flint corn varieties would typically allow. From the farmer's perspective, it is fairly vigorous, yields better than many other heirloom varieties, and is a quicker-maturing variety than many others.

All Souls products are available for wholesale, retail, and food service accounts! Be sure to check them out and don’t forget to grab your tickets at the link in bio to the La Colmena event on May 3rd.
