Customer came in asking about the spots on the bread. Just to let ya’ll know these are air pockets that occur when cold proofing overnight in the fridge. Oxidation of the flour, the natural gasses that build up when bulk fermentation called cold proofing at fridge temperature.
I bake daily. And sourdough is a natural yeast which is much healthier for sensitive digestion. If you have any questions about sourdough I will try to answer!!
