The darker you roast the coffee the less caffeine it contains. Caffeine cooks out of the beans during the roasting process, so the lighter the roast the more remains.

Did you know that coffee beans are really just the seed or pit of a cherry? Coffee cherries have very little flesh to them in comparison to door county cherries though.
