Here's a food fact that surprises almost everyone: Peru's most famous beef dish is technically a Chinese stir-fry. 🥢🇵🇪 Meet Lomo Saltado.

The story is fascinating. When Chinese immigrants arrived in Peru in the 1800s, they brought the wok and high-heat stir-frying with them. Peruvians took that technique, added their own beef, onions, tomatoes, aji, and a splash of soy and vinegar, then piled it all over French fries and rice. Here's what's fascinating: choclo has been grown high in the Andes for thousands of years, and its kernels are several times the size of the sweet corn you know — but the flavor is different too, more starchy and mild than sugary. Here's something that stops first-timers in their tracks: one of Peru's most beloved drinks is a deep, glowing purple. 💜🇵🇪
It's called chicha morada, and no, there's nothing artificial about that color. It comes from purple corn — maíz morado — an ancient Andean variety that's been grown in Peru for centuries.
