Peru’s extraordinary geography helped shape completely different food traditions across the coast, Andes, and Amazon. Over generations, those traditions also absorbed influences brought by Spanish, African, Chinese, Japanese, Italian, and other communities.

The result is a cuisine where something as fresh and bright as ceviche can share a culinary home with lomo saltado, anticuchos, ají de gallina, arroz chaufa, and countless regional dishes.

Papa a la huancaina blends aji amarillo, fresh cheese, and a little milk into a silky golden sauce, then pours it over tender boiled potato with a wedge of egg and a black olive on the side. Here's something that stops first-timers in their tracks: one of Peru's most beloved drinks is a deep, glowing purple. 💜🇵🇪
It's called chicha morada, and no, there's nothing artificial about that color. It comes from purple corn — maíz morado — an ancient Andean variety that's been grown in Peru for centuries. The corn is simmered with pineapple, cinnamon, and clove, then chilled and served sweet and refreshing. One sip and people always ask the same thing: "Wait… what IS this?" 😄

The technique stays the same: a screaming hot wok, red onion, tomato, and a splash of pisco vinegar, all tossed together fast enough to keep every ingredient's character intact. But skirt steak brings a deeper, beefier bite that turns a familiar favorite into something worth ordering on purpose.

Fiesta Westside was the first Fiesta built entirely from scratch, and this is one of the dishes we're proudest to serve at 1990 West Main Street in Stamford.
