If you’ve been in recently you may have noticed a change in our menma. Since opening, I’ve stuck to my guns in most regards, but have selectively made concessions in a few areas. Our menma was one of them; feels somewhat like an admission of guilt but we used pre seasoned packages. The main reason was sourcing, but not having to worry about another prep item didn’t hurt in the beginning either. But thanks to your guys’ continued and consistent support, I was able to convince one of our distributors to special order salted menma for us by the pallet.
So here’s the process: we soak the salted menma overnight to desalinate, then cook them down in our own, made-in-house braise solution. The result is a tastier and toothier menma, providing a great textural contrast to the rest of the bowl. WE ARE NOW OFFICIALLY 100% SCRATCH, which is no small feat, even in Japan.
Big big props the crew, I’m incredibly proud of them and our legit ass ramen shop. I’ve worked in restaurants where no one gives a s**t and everything slowly deteriorates, but that’s not us. This crew shows up every day *caring* about what we do; approaching our repetitive daily work with a mindset not just to maintain but also find ways to improve our operations and offerings. Without their dedication and commitment, these kind of improvements wouldn’t even be a thought. We want to give you our best, and with this attitude the best is always yet to come. Value is the only metric.
