I needed our guest to understand pricing. When we set a price on a item on our menu most think that is just what the price of food is, and that's a fluctuating price in itself. But pricing a menu isn't solely based on foods cost, just like your monthly expenses there are more expenses associated with running your business and ours. If you based your income solely on your food intake you'd be homeless, but yet that's what customers expect from us. Yes we have the food expenses but we also have payroll, gas, electric, water, and five to six other expenses to pay long before that oxtail plate with cabbage and sweet potatoes land in your lap.
