Day one done!
A success main goal was operational flow and I think Michael and Steve achieved a good flow! I stayed on the sidelines as my asthma has been acting up this last couple weeks.
Day two tomorrow bring it on!!!!

First day of operations for No Clucks Given.

Open at 4pm to 7pm today, Friday 4-8pm and Saturday ????

Griddle is working. Yay.

For the month of October starting next Thursday October 8, we will work Wednesday through Saturday from 4 to 7, hours may vary. We may run longer or start earlier as this is time for us to get comfortable in the truck along with our day jobs. Come November 1 we will evaluate the demand for us to be there and post up more permanent hours.

Also we are working on trying to make most items in house reducing the amount of processed foods served. This is taking more time than expected. Flavors are meeting our expectations but the required texture is not always there.

We’re getting close. Had a snaffoo with our griddle this weekend. Should covered under warranty. We’ll find out Monday.

New Website and mobile site nearly complete. We still need to work on pricing and once we start dry runs in the truck then we'll get actual pictures of the real food.

Soft start mid to end of September. Hoping to be up and fully running in October.

We serve crispy, sauce-dripping burgers and loaded fries from our giant yellow truck parked at the Post Falls Pavilion. No salads, just pure plant-powered satisfaction.

We passed our Health Inspection today!!!!! Yay!!! Monday I’ll schedule the Fire Marshall inspection!

The truck is now at the Post Falls Pavilion. Fingers crossed our inspections go well and we’ll be up and running in a month mid to late September.

We tried out a couple of winning recipes today…
The Black Bean Burger
And deep fried Black Bean TVP meatballs.

We decided that we are going to use a Commissary Kitchen.
It just opens so many more possibilities. Fresh made food rather than packaged…

We just got the truck back from our Graphics Guy!!!!
Has a few touch ups that he's gonna tackle next week but, WOW! Awesome Job!
