Our pork set changes a lot but the pork chop itself has been a staple for a long time.  One of the reasons we love it so much is the quality of the actual product.  We source midwestern Duroc Pork, which is a heritage breed known for its superior marbling and rich, buttery flavor.  And the way our local butchers cut this keeps more of the spinalis/deckle and intramuscular fat intact, (shoutout to 🤘) which in our humble opinions are the best part of the pork chop. 

We love the current set with the ‘nduja / tomato / calabrian chili sauce.  It’s rich, spicy, and loaded with flavor, and the ‘nduja really brings out the best flavors of the pork.

You’ll often see tartare mixed with a mayo or egg-yolk emulsion, and while that can be delicious, we found that keeping the aioli on the side and dressing the beef in a bright, vinaigrette keeps the flavor of the meat really clean and expressive. By keeping those components separate your palate experiences the clean flavor of the beef first, followed by the richness of the aioli or egg mousse. That contrast creates a dish that feels more layered and complex.

And then you put it all together on a warm ‘crouton’ that’s been toasted in wagyu beef tallow, which adds a hot/cold contrast and a depth of flavor you just can’t get from a cold presentation alone.  

It’s classic and simple, the flavors are nostalgic, but just done in a way that makes sense to us.

Happy Holidays from all of us here at Wooden City! ✨

Spokane, thanks for another year of being cool and loving on us! 🫶 This is an incredible community and we are just so grateful to be a part of it. And to our staff: thank you for showing up for this place and for each other, every single day. Such a stacked crew of talented, amazing humans. We couldn’t do any of this without y’all.

We’ll be CLOSED today (12/24) and tomorrow (12/25) to hang with our people, then back to our normal hours for the rest of December. And if you’re plotting out your New Year’s Eve move, we’ll be open later than usual on 12/31 (reservations are officially live!!)

We blinked and somehow we’re already on our last nonprofit partner of the year! $1 of every Old Fashioned sold during November and December will be donated to support Feed Spokane:

“Since 2007,  Feed Spokane has rescued quality food in the greater Spokane region to fight food insecurity! Through a robust partnership network of over 130 food donors we rescued ONE MILLION pounds of food in 2023. Our strong 40+ food pantry and meal site coalition partnerships quickly distributed this food to those in need. Thank you for being a hunger fighter and food rescuer!” 

It’s estimated that the restaurant industry accounts for 15% of all the food waste that ends up in landfills. If any of our restaurant friends out there have been trying to think of ways to reduce your footprint, you should check out their “Become a Food Donor” page at feedspokane.org.

Also just wanted to give a quick shout out to all of the other amazing orgs we got to work with this year!
