Our pork set changes a lot but the pork chop itself has been a staple for a long time. One of the reasons we love it so much is the quality of the actual product. We source midwestern Duroc Pork, which is a heritage breed known for its superior marbling and rich, buttery flavor. And the way our local butchers cut this keeps more of the spinalis/deckle and intramuscular fat intact, (shoutout to 🤘) which in our humble opinions are the best part of the pork chop.
We love the current set with the ‘nduja / tomato / calabrian chili sauce. It’s rich, spicy, and loaded with flavor, and the ‘nduja really brings out the best flavors of the pork.
