Every wedding cake that leaves my studio starts with someone’s vision and becomes part of one of the most important days of their life. The sketches, flavor testing, tiny details, late nights, deliveries and all the moments behind the scenes somehow lead to this.

A client sent me an AI-generated mermaid cake and asked if it was possible to make in real life. 🧜

AI designs ignore gravity, physics, and reality—so instead of just copying it, I wanted to out-design it. Hand-sculpted seashells, edible sand, a custom handmade mermaid figurine, and real built-in LED lights to capture that dreamy underwater glow.

Dark buttercream should not require turning an entire batch of white frosting into food dye. For deep shades, I make the cake natural white, then add a small amount of gel color and apply it as a thin outer coat over a white buttercream base. You get the dramatic color while keeping the buttercream tasting like buttercream. Which dark shade should I break down next: black, red, green, or navy? Save this before your next cake order, and follow for practical decorating tips that taste as good as they look 💚
