Calendar may say October and Fall, but still a tad warm outside, who can say NO to some Scratch made gumbo.

This labor of love consumed most of college football ball Saturday but well worth the wait. Starting with traditional roux and mirepoix, we make our seafood stock from Scratch and today's proteins were slow roasted chicken, fresh gulf shrimp and a Texas spin with a jalapeno cheddar sausage! Served on over white rice and garnished with fresh green onions, "Laissez les bons temps rouler."

Did we mention then cheddar cheese bread puffs. Paired with a nice Napa cabernet sauvignon from Buena Vista, Saturday not too shabby.

Last summer, American Airlines announced a new inaugural non-stop route from DFW Airport to Venice, Italy. They asked if we could cater this exclusive event in the D terminal and Chef Ted quickly answered, “Figurati (no problem)!”

Chef curated an Italian themed menu that included our Tartare di Cetriolo, Antipasti Skewers, Marry Me Italian Trifles, and both Pistachio and Tiramisu Gelatos.
