one aspect that makes HOME special is that we have an in-house butchery program. buys and butchers the whole animal himself. he selects the best and most sustainable farms in our area that raise their animals on 100% grass, outside on pasture. he then uses the entire animal, and creates delicious meals from them. it might surprise you, but it’s actually incredibly uncommon to get a sausage, or ground meat that is sourced from only one single animal. well- we want to celebrate this, and give you, not only the best meat available, but deliver it to you in a creative way. this week we received one lamb from ranch, in marin county. this farm only harvests lamb twice a year, making it even more special. then butchers the animal in house. he makes the sausage first; the chops and loin are cooked to order, then comes the shanks that have been slow braised and the meat just falls off the bone. the thing with only buying one lamb, is that there is limited meat available- with this busy weekend most of it has already gone. but tonight we have the lamb shoulder ragu that has been hand shredded and will be served with a HOMEmade pasta. come get the last of this beautiful animal and celebrate spring with us!
