With over 15 years of culinary experience, Chef Manny Raya brings a unique blend of fine dining expertise, high-volume kitchen leadership, military discipline, and creative innovation to every dish he creates. His career has taken him from Crescent City’s local restaurant scene to the Heathman Hotel in Portland, Yellowstone National Park, and fine dining kitchens throughout California.

A U.S. Army veteran and experienced sous chef, Manny’s cooking combines French and Italian influences with modern comfort food and Texas BBQ techniques. Known for his attention to detail, bold flavors, and commitment to quality, he has built a reputation for delivering exceptional food in both intimate and large-scale dining environments.

Today, Chef Manny is launching his independent culinary career in partnership with longtime friend and fellow entrepreneur Sam Hernandez, owner of Casita Coffee. Together, they are bringing fresh breakfast offerings, rotating lunch specials, and chef-driven cuisine to Crescent City farmers markets and community events throughout the North Coast.
