Polpettone Palermitano di JuLā
Honoring my great-great-grandfather Gianni Torregiano's roots

Prep time: 15 minutes
Bake time: 20–25 minutes
Servings: 4–6

Ingredients:
* 1.5 lbs lean ground pork
* 1/2 cup authentic Italian cheese blend (Mozzarella, Parmesan, or Pecorino)
* 1–2 tbsp extra virgin olive oil
* 1–2 tbsp authentic Italian seasoning blend
* Dried basil and oregano, to taste
* Minced garlic, to taste
* Salt and pepper, to taste
* 1 cup Italian panko breadcrumbs
* Thinly sliced onions & red, green, and yellow bell peppers
* Optional: Chili peppers or red pepper flakes (for an extra kick)
* Optional: A small pad of unsalted butter (for extra richness)
* Warmed marinara sauce (served on the side)

Instructions:
1. Preheat: Heat oven to 400°F (200°C).
2. Mix & Shape Base: In a bowl, combine ground pork, cheese blend, olive oil, Italian seasonings, basil, oregano, minced garlic, and salt and pepper to taste. Press into your baking pan.
3. Add Panko: Evenly spread Italian panko breadcrumbs over the meat.
4. Add Veggies, Heat & Butter: Top with thinly sliced onions, bell peppers, and chili peppers if you like a little heat. Add a small pad of unsalted butter on top if desired.
5. Bake & Rest: Bake uncovered for 20–25 minutes until cooked through and crisp. Rest 5 minutes, then serve with warm marinara.

HOMEMADE HONEY-BUTTER ROLLS & CINNAMON SPREAD

CINNAMON HONEY BUTTER
---------------------
Ingredients:
- 1 stick (1/2 cup) unsalted butter, very soft (room temperature)
- 1/4 cup powdered sugar
- 2 tablespoons honey
- 1 teaspoon ground cinnamon
- 1 pinch salt

Instructions:
1. Whip the softened butter in a bowl using a hand mixer or fork until smooth and light.
2. Add powdered sugar, honey, cinnamon, and salt.
3. Beat on medium-high for 1-2 minutes until completely combined, pale, and fluffy.
4. Set aside at room temperature.

THE ROLLS
---------
Ingredients:
- 1 packet (2 1/4 teaspoons) active dry yeast
- 1/4 cup warm water (105°F to 110°F)
- 1 cup warm milk (105°F to 110°F)
- 1/2 cup granulated sugar (divided)
- 4 tablespoons unsalted butter, melted and slightly cooled (plus extra for brushing)
- 1 large egg, room temperature
- 1 teaspoon salt
- 4 cups all-purpose flour

Instructions:
1. BLOOM YEAST: In a large bowl, mix warm water, yeast, and 1 teaspoon of the sugar. Let sit for 5-7 minutes until foamy.
2. MIX DOUGH: Add warm milk, remaining sugar, 4 tbsp melted butter, egg, salt, and 2 cups flour. Mix on low until combined. Gradually add the remaining 2 cups of flour, 1/2 cup at a time, until soft dough forms.
3. KNEAD & FIRST RISE: Knead by hand or with a dough hook for 5-7 minutes until smooth. Transfer to a greased bowl, cover with a towel, and let rise in a warm spot for 1 to 1.5 hours (until doubled).
4. SHAPE: Punch dough down. Roll out on a floured surface to 1/2-inch thickness. Cut into 15-16 equal rectangular pieces. Fold edges slightly underneath for rounded tops.
5. SECOND RISE: Place on parchment-lined baking sheets 1 inch apart. Cover and let rise for 40-45 minutes until puffy.
6. BAKE: Bake at 350°F (175°C) for 12-15 minutes until golden brown.
7. FINISH: Immediately upon removing from oven, brush tops generously with melted butter. Serve hot with cinnamon honey butter.
