It's the return of the Kolsch! This style of beer was traditionally brewed in Cologne, Germany. Historians think its origins date back to 1603 when the city council outlawed lager yeasts. Not to be denied their demand for crispy, straw-colored easy drinking beer, the locals adapted by forcing ale yeasts to ferment in traditionally colder temperatures reserved for the outlawed lager strains.
