Sauce on the Blue is conveniently located in the Silverthorne Pavilion Shopping Center, near the I-70 exit. We are right on the Blue River and offer great mountain views of Buffalo and Red. With an old world influenced style, our menu offers a complete selection of Italian dishes to satisfy your palette. From classic favorites like Spaghetti Bolognese to more contemporary dishes such as our Penne Gorgonzola, we've got something for everyone! We're open everyday at 11:30am for lunch.

Emily has been part of the Sauce on the Blue family since the very first day we opened our doors. For her, the best part of every shift is building lasting friendships with our local community and welcoming familiar faces back time and time again. "It's a privilege to serve the people who have supported Sauce on the Blue from the very beginning."

When she's not at the restaurant, you'll likely find Emily exploring Colorado's trails with her dog, Tucker, or volunteering at a local horse rescue.

Tim and Deb Applegate fell in love with Colorado on their ski trips from Connecticut and made the move in 2016. Partnering with Shevy Rashidi, Tim helped turn a dirt-floor space into what became Sauce on the Blue. Today, Sauce proudly celebrates 10 straight years of “Best in Summit.”

Beyond the restaurant, Tim has served 6 years on Silverthorne Town Council and continues giving back through generous community food donations.

Join us August 1, 2026, at the Vintage Baseball Game for Sauce’s famous hot dogs. Be sure to visit Sauce on the Blue, KÚCU Tequila Bistro, and Enza’s Delicatessen for some of Silverthorne’s best dining!
