Erebuni Bacon Update 🥓
Day 3 of the curing process for Erebuni Bacon.
Erebuni Bacon is based off of a smoked Pork product that was popular in Soviet times called “Erebuni” named after the ancient fortress.
Based off of what my dad describes it is essentially salt cured pork loin that is smoked, similar to Canadian Bacon, however I’m not a big fan of loin, so I thought it’s best to use the belly and make bacon out of it instead using the same honey cured method and spices.
P.S. My dog 🐶 apologizes for interrupting, she just couldn’t help the aroma. 😅
