Had a fabulous two day event at the Taste of Kitsap and because of YOU, we were able to take home two awards and I was just blown away by the love and support from the community! Thank you for voting for us and allowing us to win Best Overall Taste and Best Savory Food!! We absolutely love what we do and we love to come out and share with you all. We love to see all the familiar faces and meet new people! I cannot tell you how much I appreciate the community…you guys come out and always support us!!!

JAMES JUST OPENED HIS OWN TRADING BUSINESS YESTERDAY! 😆 🤣

Yesterday at the market, the kids were given Market Bucks cards that they could use to shop around the market. They could buy food, toys, and whatever the vendors were selling.

So my little James went to one booth selling those big squishy dumplings.

James: “How much is the big one?”
Vendor: “$50.”
James: “I only have $20 Market Bucks. Can I trade you with lumpia?” 🤣

The vendor said, “Let’s talk about it later.”

James: “Later?! Someone will buy it later! Can I trade it with lumpia NOW?” 😂😂😂

I guess he was afraid somebody else was going to get his squishy dumpling! 😅

So he came running back to our food trailer, got lumpia, and went back to negotiate his deal.

And because we were also accepting Market Bucks from the kids, he used his $20 card with us too. 😂

DEAL CLOSED! 🤝🤣
James got his squishy dumpling.

But guess what?

At the end of the market, WE DON'T HAVE HIS $20 CARD TO CASH OUT! 🙃😂

So basically… Mommy gave him the lumpia, accepted his Market Bucks, and then James used that same value to get a $50 squishy dumpling. 🤦‍♀️🤣

This kid didn't just go shopping.

HE CREATED HIS OWN ECONOMY. 😂😂😂

I'm telling you… food trailer life is teaching this boy EVERYTHING:

💰 Negotiating
🤝 Bartering
📈 Business
😂 And how to convince Mommy to finance his transactions!

Future entrepreneur? Maybe.
Future food truck owner? Definitely.
Future accountant? Please no. I already have enough problems. 🤣🤣🤣

I remember that market and how things unexpectedly worked out. I’m just grateful that I was able to help, and even more grateful that some of my customers came along and supported you as well. That means so much to me.
And hearing that you are a picky eater, especially coming from a family with a chef and someone who has high standards for cleanliness and food, makes your words about my food even more special. Thank you for noticing the little things—the ingredients, the preparation, the family behind the food, and most importantly, the love we put into every dish.
I always say that I don't just want people to eat my food. I want them to taste a little piece of home, family, and the love that goes into what we do.

This is what three slabs of pork belly look like after cooking.
I cut the pork into large cubes because it naturally shrinks during the long, slow cooking process. Taking the time to cook it low and slow brings out the rich flavors and gives it that tender, melt-in-your-mouth texture.
One batch of Humba Bisaya is done!

Now it's time to start cooking our Pork Adobo for this weekend's two-day event. The prep continues!
