This past weekend me and the guy went down to Griffin, GA to cook in 2026 Doc Holiday bbq festival. It was a solid outing even though we had to fight the weather a little bit. Out of a field of 36 teams we managed to score a 4th place in pork, 7th place in loin, 25th in ribs, and an 11th place brisket for a 5th place overall finish. Wanted to give a special shout out to Off The Chain BBQ for all their tips on loin. It really helped out this weekend. Congrats to Shark Bite BBQ on their brisket win this weekend. And congrats to all the other teams that got to walk the stage this weekend. Always a pleasure competing with you. Heath Riles BBQ thanks for putting out the supplies to cook this award winning food. And thanks to all the family and friends that came out to the event to show support!

The Traeger Grills brisket turned out fantastic. After a 13 hour cook seasoned with coasher salt, course black pepper, garlic powder, lawrys and Kinder prime steak seasoning I rested in my food warmer for 10 hours. This was about as close to perfect as I can expect for a choice grade brisket! If you want to wow your guests for your next event send me a DM

Brisket time! Gonna throw this one on the Traeger Grills woodridge elite. Typically use my offset for briskets but want to see how the super smoke mode on this thing compares to a real wood fire. Typical Texas style brisket with a black truffle rub on top to add a little extra flavor. Stay tuned for results!
