Jack Timmons grew up in Texas and has lived in Seattle for the last 3 decades. In 2012, he attended BBQ Summer Camp at the Meat Sciences department of Texas A&M, then toured many historic barbecue temples of Central Texas. Returning to Seattle, he bought an offset smoker, imported some post oak, mesquite and hickory, and started the Seattle Brisket Experience. After more than a year of practicing the art of barbecue, and serving old-school, succulent smoked meats to thousands of Northwest BBQ fans at BBQ raves, Jack opened a restaurant in the S**o region of Seattle – Jack’s BBQ.

The Seattle barbecue scene sure has changed a lot over the years. When I first moved here in the late 80’s, I used to call it “Southern Barbecue” because it was very sauce-focused. Where I come from, just outside of Dallas, it’s 100% about the meat.

But when my wife told me to get my barbecue fix with teriyaki, I knew it was time to buy a smoker and get to smokin’! 🤠🔥

Hey y’all. We closed up shop early on Monday to treat our staff to a well-deserved fiesta! 🔥⚽️ Soccer, carne asada, mariachi, and an all-around good time! Team Algona/Lakewood/Federal Way defended their title and took home the trophy for the second year in a row. Truly thankful for the amazing and dedicated employees we have at Jack’s BBQ and Jackalope Tex Mex

Hey y’all — this week Jack’s BBQ turns 12 years old! Hard to believe this whole thing started with me cooking barbecue in the backyard.

A lot has changed over the years, but one thing hasn’t: barbecue has a pretty good way of bringing folks together. I’m incredibly grateful for everybody who’s stopped in for a plate, told a friend about us, brought the family by, or supported us along the way.

Here’s a little story from the early days about how we got our first smoker over to the S**o location. 🤠🔥

What a weekend in the city! 💥 We kicked it off and closed it out at Bumbershoot serving up our crowd-favorite chopped brisket and pulled pork BBQ mac bowls and sandwiches.

Then, we headed over to the University of Washington for the Apple Cup! Jackalope Tex Mex brought the heat with wood-fired fajita bowls on the Santa Maria grill, while the Jack’s BBQ catering team served up classic BBQ spreads in The Zone’s private tents.

Huge thanks to everyone who came out to eat! 🔥🥩

We recently had a ton of work done to this beauty thanks to Randy at Scoville Motorworks — a new hand-sewn top, cowhide interior accents, fresh paint, and matching hubcaps to boot.

Keep an eye out for that BRISKET plate. 👀
