The dish: The $27 Shamburger
The details: The burger is discounted to $19 during happy hour, 4-5 p.m. daily
The Shamburger, by contrast, is available every day. There are no lines nor a limit on how many burgers are offered daily. Similar somewhat to The Little Beast, the kitchen ladles beef tallow over Prime grade beef until the surface caramelizes, wringing out that Maillard reaction. The patty slides into a 500-degree oven until the interior turns medium-pink and molten cheddar cascades over the edge of the crust. The server won’t ask how you want your burger cooked; the steakhouse believes it’s best cooked medium. The burger comes stacked with a relish made fiery with Calabrian chiles, plus gem lettuce and a Dijon-aioli spread. If your fingers get greasy, that’s because the steakhouse toasts both sides of the Macrina bun in beef tallow.
