Pure Country Beef Eye Round from Moses Lake, WA. Brought to us by our friends PRESERVATION MEAT COLLECTIVE
Didn't clean it up too much. Rubbed it down with hoagie jazz and salted it for 24 hours. Roasted for 45 min starting in a cold pizza oven up to 510f. Pulled it for 20 min and then back in for 45 min or so. Pulled them at about 115/120. Different oven different tech. Cooking is fun.
