If you’re using wood chips or chunks at home, don’t soak ’em! 🪵🔥

I know a lot of folks have been told to soak their wood chips before throwing it on the fire, but all that added moisture has to burn off before that wood can really get going. That cools things down and makes it harder to get the clean combustion we’re looking for.

Keep your wood dry, let it burn clean, and you’ll get the kind of smoke you actually want flavoring your barbecue.

Dry wood. Clean smoke. Better ‘cue.

The Seattle barbecue scene sure has changed a lot over the years. When I first moved here in the late 80’s, I used to call it “Southern Barbecue” because it was very sauce-focused. Where I come from, just outside of Dallas, it’s 100% about the meat.

But when my wife told me to get my barbecue fix with teriyaki, I knew it was time to buy a smoker and get to smokin’! 🤠🔥
