Handmade cavatelli, sweet corn and chèvre made into a velouté as the sauce, Mother Earth cremini mushrooms, miner’s lettuce, and Locatelli. 🍄‍🟫🥬🧀

Little Bit About Miner’s Lettuce (Purslane):
Miner’s lettuce, or purslane, is a succulent with a young pea-shoot-like flavor. Gold miners discovered that this indigenous plant was rich in vitamin C in a place where vegetables were scarce. This helped prevent scurvy. While this dish tells a story of the Gold Rush, this plant was chosen to pay tribute to Scranton’s rich mining heritage. 🌱

We recommend pairing this dish with San Cassiano Chardonnay or Cuvée Bianco! 🍷
