Meet Matera Pear.

In the Valle del Sinni, in southern Italy, grows an ancient pear called the Signora della Valle del Sinni.

When we visited Basilicata this summer, we learned that there isn’t one large orchard filled with these pears. The trees are scattered across the land, growing on different farms throughout the valley.

And when the fruit is ready, the farmer goes looking for it.

From farm to farm, tree to tree, gathering the Signora pears wherever they grow.

Small, fragrant and delicately sweet, the Signora is recognized by Slow Food as a Presidio, helping preserve a pear that has belonged to this landscape for generations.

We came here wanting to understand the fruit we would eventually serve at Allora. We left with a much greater appreciation for everything it takes to keep something like this alive.

And now, a little piece of that valley has made its way to Scottsdale, crafted into a smooth, refreshing sorbet that lets the fruit speak for itself.

Some flavors begin long before they reach the pozzetti.

Yesterday, we spent the day in Basilicata visiting one of the family farms behind an ingredient at the heart of our next flavor.

We came to learn more about where it comes from, and we left with something much more.

What began as a visit became an entire day together. They walked us through land that has been in their family for four generations. They welcomed us into their homes for lunch, where so much of what surrounded the table came from the land they care for.

Their mother even brought out homemade gelato made with fruit from the farm and waited for us to taste it. Somehow, thousands of miles from home, we found ourselves around a table being treated not like visitors, but like old friends.

“You’re in Italy. You’re our guest.”

That feeling stayed with us.

We came to Basilicata to learn about the beginning of a new flavor. We left with a deeper appreciation for the people and traditions that give an ingredient its story long before it ever reaches Allora.

We can’t wait to share this one with you. 🇮🇹

This month, we’re taking you to Sicily.

Our new Sicilian Peach Sorbet is made with Regina peaches from the province of Agrigento, a fruit rarely found outside of Italy and one that took months of paperwork and coordination to bring here.

Could we have used local peaches? Absolutely. Arizona grows beautiful fruit.

But every region tells a different story.

The Regina peach is prized for its delicate aroma, floral notes, and soft, honeyed sweetness, offering a flavor profile that feels distinctly Sicilian.

At Allora, we’re always searching for ingredients that allow you to experience a different place through taste.

Joining the lineup this month is the return of our Lemon Zest Gelato and Pistachio Granita, just in time for the Arizona summer.

Gone for now, but not for too long.

As summer approaches, we’re making room for a new season at the counter. Mesquite Honey Lavender is leaving until next year, while Ricotta & Croatian Fig and Coconut Almond Crunch will be taking a short pause as we prepare for a lineup of summer flavors arriving soon.

It’s easy to stay focused on the next flavor, the next batch, the next idea. This felt like a moment to pause and appreciate how far things have come.
