The first Bears burger we ever made had his name on it.

2013. Chef Ed Musto built The Original Spicy Ditka Burger with Vienna Beef Ditka Sausage, and a Ditka Sausage Pizza to go with it. WGN's Marcus Leshock came out and our Bears Burgers of the Week ended up on the news... the Ditka Burger and that pizza right there with them.

This month, after years without one, we finally created a new Bears burger. The Chicago Bears Honey Burger is on our menu right now. We planned that for football season. We didn't plan this.

Every Bears burger we've ever made traces back to the first one. The one with his name on it.

Chef Ed passed in 2018. Coach Ditka today. Somewhere Chef Ed is grilling him one right now, and Coach is telling him it needs more giardiniera.

Rest easy, Coach. Chicago doesn't make them like you anymore.

drove out of Chicago for our giant mozz stick. 27,000 people liked her reasons why.

The burglars haven't been caught. We upgraded anyway.

It's been just over a week since the break-in. Four of our six gaming terminals are still gone, and insurance won't cover everything, so we'll be out real money on this.

The gaming area just got a brand new surround... a full wall topped with frosted glass, being finished next week. More private, more comfortable, better than what the thieves broke.

Something gets broken around here, it comes back better.

The kitchen never slowed down. Everything's still made from scratch, every day. And the support you've shown us since day one is a big part of why.

Thank you for standing with us. We're resilient. We'll be fine. We're here.

We're one of the businesses in this Daily Herald story.

We'll never know how much any one voice mattered. But so many of you shared, commented, and refused to treat this as normal... and now 50+ detectives across six counties are working these smash-and-grab crews, with the Illinois Gaming Board leading and the Attorney General's office involved. Businesses spoke up. Communities spoke up. Law enforcement answered. That's how it's supposed to work.

As for us: we're open. Not 100% yet... the gaming terminals are gone until next week at the earliest, and we'll still be out thousands. Insurance doesn't cover everything, and beefing up security costs money too. But the kitchen never missed a beat since Thursday, everything's still made from scratch, and seeing familiar faces walk back in has been the best part of the week.

Today we remember Chef Ed.

On this day in 2018, we lost him. Our first chef, and the man who helped rebuild Frato's in the early days, when this was a worn-out restaurant with more plans than help. This video is from that era: Chef Ed on WGN News with Marcus Leshock , cooking the Chicago Bears Burgers of the Week that put the new Frato's on the map. A new burger every week, built around that week's Bears matchup. His fire, his hands, his hustle... that's the foundation this place still stands on.

We've been thinking about him extra this week.

Because this week, someone came through our window. And our team did exactly what Ed did back then: showed up to a broken building and rebuilt it. Glass, repairs, long hours nobody signed up for. This place has been rebuilt on heart before. It just happened again.

Ed would have been the first one here with a broom.

That team worked extra hard yesterday, and there's still more to do. So we're staying closed today to give them some relief. They earned it. Tomorrow, Thursday at 4pm, the ovens are back on... and every scratch-made thing we serve still traces back to the standard Ed helped set.

Miss you, Chef. The work still matters. 🖤

Early this morning, thieves hit several businesses in our area — ours included.

Everyone is safe. That's the headline.

Here's what we'll remember about today: our neighbors. Jazzercise Schaumburg and our friends at Opolska Restaurant noticed fast and got police called immediately — and because of that fast response, the damage here was contained and other businesses nearby were protected from becoming the next stop. That's what a real business community looks like.

The Schaumburg police were fast, professional, and genuinely caring. And here's the part that's hard to write: the officers explained that under current Cook County policy, they're limited in how they can pursue this type of crime. Let that sit for a second — we were robbed, there are limits on pursuing the people who did it, and the officers had to be the ones to tell us. That policy harms businesses like ours directly. We're not a talking point. We're a scratch kitchen with a broken window, broken equipment, concerned staff, and a closed sign that shouldn't be there today. We appreciate our police and everything they did — and everything they're still willing to do within the rules they've been handed.

And our team. Most of you know Frato's runs a culinary program that turns students into chefs. They showed up today protective of their home — because that's what this place is to them. Every job is safe, and nothing about our mission changes because someone came through a window.

We'll be closed Tuesday at minimum while we clean up glass and make repairs. We'll post updates right here.

We're fine. We'll get through this. To everyone who's already sent kind words — thank you. If you want to help, just come see us when the window's fixed and the ovens are back on. Schaumburg keeps proving why we're here.

Chef Joe makes the sriracha cheese himself. It's a pain. He does it anyway.

The Sriracha Steak Burger is back — first time since 2023.

There's a perfectly good sriracha cheese you can buy in a bag, and it tastes like the bag. So Chef Joe makes ours from scratch. It goes on two handmade smoked apple bacon and Black Angus patties — then a grilled honey lime carne asada steak on top of that. Yes, steak on a burger. The honey and citrus cut the heat instead of piling on more.

Then crunchy tortillas. Every burger you've had is soft on soft. This one fights back. Fresh spinach, red onion, tomato, and our special burger sauce on a grilled Turano classic bun.
