Dorothea Opoku-Nyame an immigrant from Ghana, West Africa started cooking at age of 7. She had so much passion for food that whilst in middle school she was secretly making and selling peanut brittle “nkate cake” and coconut milk toffee after school. In 1988,Dorothea went on to study cookery at Calvary Methodist Vocational Institute in Ghana, and attained the City and Guilds London cert
ificate part 1&2. She worked at Golden Tulip, a 4 star hotel as a cook after graduation. She cooked her way into becoming a Chef after three years and then moved on to manage ‘Spoons’ Restaurant whilst having a catering business on the side. In the mid 90’s Dorothea got hired as Quality Assurance Manager by First Catering Limited; a commercial airline catering company servicing Lufthansa, KLM, Swiss Air, Delta Airlines, Ethiopian, South African, United Arab Emirates and Chartered flights. Dorothea moved to the United States in 2000, where she worked as Food Service Coordinator at Aramark Corporation. In 2013 she enrolled at International Culinary Center in Manhattan, New York and acquired Culinary Degree in Classic French Cooking and SafeServ Certification-Food Protection Manager Certification Examination.
