Menu spotlight: Striped Bass🐟
Our fish changes between striped bass and golden tilefish depending on what’s available locally. When we’re serving striped bass, it’s typically caught off the Carolinas and cooked using a technique that applies direct heat only to the skin, allowing the fish to cook through while keeping it incredibly flaky.

We use the bones to make a bright citrus sabayon and serve the fish with crispy Carolina Gold rice, scorched pineapple, and pickled vegetables. Inspired by the flavors of a piña colada and finished with French technique, this is a coastal dish with the perfect amount going on.
